Black Tea
In the processing of the black tea the tea leaves are first spread on trays or racks and withered in sun for 18-24 hours. After that, when dried, the leaves are rolled and twisted in order to break down the cell walls and accelerate the oxidation (fermentation) process. At last tea leaves are fired and dried, which stops further fermentation. The color of black tea is dark brown or black.
